This recipe is super easy and basically adapted from a recipe I found on Food.com which was eggless.
Vegan treats are ideal for us because our son Lucas has a variety of food allergies (egg being one of them). So this recipe was ideal.
1 cup organic flour (for gluten free, use buckwheat flour)
3/4 cup organic brown sugar
1/2 teaspoon of baking soda
1/4 teaspoon of pink Himalayan salt (sea salt is fine as well)
4 tablespoons of water
1/4 cup of coconut oil (equivalent to the margarine indicated in the original recipe)
1/3 cup of organic raw cocoa powder
Honestly, all I did was mix all the ingredients together, starting with the dry ingredients. I preset the oven for 400 degrees. I rolled them into quarter size balls (or maybe a little bigger). They cooked for about 10 minutes and then I let them cool down. This batch yielded about 15 cookies. I think if you let the mix sit in the refrigerator for an hour it may make it puff up a bit more. I didn't do that and I was fine with my decision, lol.
The cookies were very tender and chewy. This recipe is fully vegan, organic, and can be made to adjust to a variety of food allergies.
